Tis the season for fresh peaches, and there's nothing quite like a Georgia peach ya'll ;D A stop at the local farmer's market today inspired me to try a recipe I've been sitting on for several years now.....fresh peach salsa!
Not only good on tortilla chips, but great on top of grilled chicken, fish or pork as well. Pretty simple ingredients, the most important of course being the peaches. The ones we picked up today were absolutely perfect....sweet and dripping before we even took a bite ;D
Here's the recipe:
2 cups chopped, peeled fresh peaches
1/4 cup chopped vidalia onion
3 tblsp lime juice
3 tblsp jalapeno pepper (or for a mild version you can substitute 3 tblsp diced green chilies from a can)
1 clove garlic, minced
1 tblsp snipped fresh cilantro
1/2 tsp sugar
Mix all ingredients together
Cover & chill for 1-2hrs and serve!
The lime juice is really what gives it the zing! Really different and so yummy! I used the canned chilies and omitted the cilantro as I'm NOT a fan!
